Pulled Pork Avocado Slaw Wraps
So what would be the best possible way to eat some of that leftover pulled pork and avocado cole slaw from last night? Definitely in a wrap.
First I took the pulled pork out with a fork. You don’t want too much of the sauce, it will make the wrap a mess. Microwave it for 45 seconds. The microwaving will release more of the sauce, so drain it out or sop it up with a paper towel. You don’t want too much sauce.
I had a leftover tortilla, so I slapped the reheated pork on there. Then sprinkle some Mexican cheese over the top.
Wow, this is looking like the best leftovers ever. Back in the microwave for 20 seconds.
Now cover with two heapings of the avocado cole slaw. Wrap it up and enjoy.
