Chocolate Peanut Butter Marshmallow Pizza
Goat kids never ate a lot of cake, so for birthdays, goat mom (aka pygmy goat) would often make this incredibly decadent chocolate peanut butter marshmallow pizza instead. It was always a huge hit — it’s better than 99% of all cakes — and I didn’t realize it at the time, but it’s an exceptionally beautiful dessert too. You could probably dress it up with other sorts of candies, but I’ve always enjoyed it the traditional, simple way.
Ingredients
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/2 cup softened butter
- 1/2 cup peanut butter
- 1 teaspoon vanilla
- 1 egg
- 1 1/2 cup flour
- 2.5 cups marshmallows
- 1 cup chocolate chips
Instructions
- Heat oven to 375
- Combine first six ingredients and mix well
- Add flour 1/2 cup at a time
- Shape into a ball by hand
- Plop dough into middle of pizza pan, and press the dough until it’s about 1/2 an inch away from the edge of the pan
- Bake the dough for 10 minutes
- Remove from oven and top with half the chocolate chips, then all the marshmallows, then the rest of the chocolate chips
- Bake for about 6 more minutes, and then check every minute or so until the marshmallows have turned to a golden brown
- Now there’s two things you can do here. The traditional thing to do is to let it cool down to room temperature, because then it can be cut into beautiful slices with a pizza cutter. And it will be delicious. If you try to slice it hot it will fall to pieces. It won’t be as pretty, but you can probably imagine how it tastes and may decide it’s worth it.
