BLT Salad with Red Pepper Mayonnaise and Homemade Croutons
The other week I experimented with a BLT Salad, with homemade red pepper mayonnaise and croutons. This actually came out really great, although I didn’t take photos of the process. Here’s the recipe I made up though, which was enough for two.
Ingredients
- 3 cups lettuce
- 6-8 slices of bacon
- 1 large tomato
- 3-4 slices of bread
- 2 tablespoons olive oil
- 1/2 red pepper
- 1/2 cup mayonnaise
- 2 garlic cloves, minced
Directions
- Head oven to 400
- Cook bacon on skillet on medium-low heat (I like to cook bacon slowly. Can never get it right if I go too fast.)
- Cut bread into crouton-sized cubes and toss with olive oil and some salt and pepper if you’d like
- Put bread into over and it will turn into pretty good croutons in about 15 minutes
- Slice red pepper and roast in oven for about 10 minutes
- Remove red pepper from oven and chop into small pieces
- Stir red pepper and garlic into mayonnaise
- Toss the lettuce, tomato and bacon with the red pepper mayo (I also added some leftover cucumber from another recipe)
- Add the croutons last so they stay as crispy as possible. Enjoy!
